Huang Guan Yin means "Yellow Goddess of Mercy" and is cultivated and produced in Wuyishan, one of the most prestigious tea region in China. Also known as Yan Cha (Rock Tea), Huang Guan Yin is a cross hybrid of Huang Dan and Tie Guan Yin cultivars and was developed by the Tea Research Institute of Fujian Academy of Agricultural Sciences from 1977 to 1997. The medium size tea leaves are picked in the spring time and will undergo multiple roasting sessions using fruit (Longan) wood charcoals. The roasting process adds warmth, depth and complexity to the tea. The roasting is usually spread over a 5-6 months period and finished in late October to mid November. A post-roasting resting period of 4-6 months is recommended which allows the tea to age and mellow out and acquire the ultimate balance of flavours and aromas of roasted nutty notes and natural rich floral and fruity fragrance. To maximize your experience and the full range of depth from this tea we recommend Gong Fu Cha style of brewing with a gaiwan.

Gaiwan / Gong Fu Cha Style

Rinse tea leaves first with 95C / 205F water. Let leaves soak for 5-10 sec and discard water. The tea leaves are now ready to be brewed. 4-6tsp / 4-6g tea

1st brewing length 20-30 sec

2nd brewing length 10-20 sec
