Matcha translates to ground (ma) and tea (cha) in Japanese. Our organic Ceremonial Matcha is cultivated from a clay terroir rich in minerals which contributes to its luxurious flavour and thick texture. Our producer, Mr. Kanamoto, produces from a single estate, where the leaves are harvested in the spring after they have been shade-grown for 20 days. The leaves are de-stemmed and de-veined and slow stone grounded to a fine powder of 10 microns. This high quality Ceremonial Matcha grade has all the markers for its excellence in addition to its organic certification.
Matcha production is a laborious task and involves growing and processing methods specifically unique to it. This fine bright green powder is referred for its effect as "quiet alertness" and was once used by monks to help their meditative concentration. Its claims for health benefits are numerous.
How to prepare Matcha
Tea bowl / Chawan

1-2tsp / 1-2g tea

60-80ml / 2-3oz water @ 70C / 160F
Preparation method:
- Warm up your tea bowl (chawan) first with hot water and soak your bamboo whisk (chasen) to soften the prongs for 10-15 seconds. Discard the water.
- Using a sifter, sieve 1-2tsp of Matcha into the tea bowl (chawan).
- Pour over your heated water (70C / 160F).
